The girls are coming round and you’ve got the Prosecco in the fridge – what’s the easiest thing to serve? A delve-in, easy-to -prepare, snack board that looks great and takes only a few minutes to prepare.
With Prosecco you’ll want to go easy on the flavours, opting for foods that are not too overpowering. The bubbles of Prosecco (aka “perlage”) will clean away cheeses. The sweetness (most Prosecco’s have 10-15gl residual sugar which is way higher than Champagne, making them softer and easier to drink) means they’ll pair well with foods such as cashews, avocado and prawns which have natural sweetness or creaminess to them.
Here are 10 ingredients or elements you’ll want to add in including a couple of “easy-but-look like-you-put-effort-in” recipes to wow your guests:
Home-made elements:
1) Easy-peasy Taramasalata recipe:
- 1 tub low-fat Philadelphia
- 2 heaped tablespoons crème fraiche
- 1 packet of smoked salmon (80gr or 100gr will do depending on which packet you can find), cut into strips
- squeeze lemon juice (fresh or from a squirtie)
- black pepper
Whizz everything together in a blender. Makes enough to divide into 2 pots. Put in the fridge to chill whilst you prepare the rest.
2) Marinated prawns :
- 1 or 2 packets cooked, peeled prawns (depending on how many guests)
- handful cherry tomatoes, cut into quarters
- basil cut into shreds
- drizzle of extra virgin olive oil
Throw everything together and add a few grinds of black pepper
Cheese board with:
3) Soft cheese, such as brie or camembert
4) Herby Cheese such as Boursin or Philadelphia with herbs
5) Nuts : Walnuts, salted almonds or cashews
6) Veggies: Celery sticks, steamed carrots, or strips of red pepper
7) Bread : sliced Baguette for the dips, add in some crackers or tarralli with fennel seed for some variation.
8) Fruit: Green grapes, sliced Avocado
Ready prepared:
9) Guacamole
10) Lentil crisps with sour cream and chive flavour
What to avoid :
– Honey-roasted nuts, salami, cured meats, hard cheese, truffle flavoured anything.. These are great for the red wine board.. coming next!
